Olympia Tveter's Famous Whole Wheat, Flax Seed, Vegan Cookie Recipe


So many people ask me for this that I've decided to post it online to the site; so here it is. Cut the recipe in half for a smaller batch. Unfortunately, you may find them so scrumptious that I think you'll regret not making more! :)

1 3/4 C. brown sugar
2 C. canola oil
2 1/2 tsp. rough sea salt
2 tsp. baking soda
1/4 C. molasses
12 tbsp. cornstarch mixed with enough water to equal about 4 eggs
4 1/2 C. whole wheat flour
1 1/2 C. flax seed flour
1 package of Semi-Sweet chocolate chip cookies

First dump in a bowl the sugar, canola oil, rough sea salt, and baking soda and mix well. I never measure the molasses, I just pour it in! ;) I'm just guessing that it's about 1/4, but it's a healthy amount. Mix it in well. When you mix the cornstarch and water, it'll be tough to stir, just quickly keep stirring and it should stir in smooth and liquidy. Dump in the cornstarch mixture and also stir that in well. It should be pretty soupy in texture. Next put in a cup of wheat flour, followed by a the flax seed flour and stir it in well. Then dump in the rest of the wheat flour. It'll be a built oily. If it's too oily, dump in just a little extra flour, followed by adding the chocolate chips. Set the oven at 350 F. and roll the dough into balls of about 1 to 1 1/4 in. in diameter. As you make the balls, make sure they have at least 3 chocolate chips a piece, but not more than 4. Bake them for 7 min. 10 seconds. lol, yeah, you're probably saying, "& 10 seconds?" It's just the time that works. You could probably get away with 15 or 20 seconds more, but not more than that. Remove them and place them on a clean kitchen towel to cool. Eat them hot or cool. I  prefer them cool and to eat them all day long! Mmmmm, Irresistibly yummy!
